Not all olive oils are the same. Thanks to the many varieties that we have – only in Catalonia there are five Denominations of Origin – we can enjoy each of them according to the dishes we are going to prepare.
There are varieties, for example, that of Siurana, which is very pleasant to the palate with a fragrance of green almonds and apples; that of Les Garrigues and Terra Alta is fruity, with a fragrance of tomatoes and almonds the first and especially of almonds the second. Baix Ebre-Montsià oils are transparent, without veils; sweet, tasty oils. And finally, those from L’Empordà, balanced in their spicy and bitter taste, very aromatic, reminiscent of aniseed, artichoke, tomatoes, almonds and dill.
